Region and Vineyards

L’Aventure Winery is located on the west side of Paso Robles, a region known for its limestone-rich soils and maritime influences, making it ideal for Rhône varietals. The estate vineyard is meticulously maintained, yielding only 1 ton per acre for Mourvèdre and 2 tons per acre for Grenache and Syrah. These low yields ensure concentrated fruit flavors and exceptional quality in every bottle.

Paso Robles’ Mediterranean climate, marked by warm days and cool nights, allows for an extended growing season, enabling optimal ripeness and complexity in the fruit. The combination of limestone soils and meticulous viticulture on this estate vineyard creates wines with deep minerality, balanced acidity, and robust structure.

Winemaking

The Côte à Côte is a blend of 45% Grenache, 30% Syrah, and 25% Mourvèdre, all sourced from the estate’s own vineyards. The wine is aged for 14 months using a unique combination of 36% 1-year old French oak, 33% new French oak, 17% concrete, and 15% amphora. This diversity of aging vessels contributes to the wine’s complexity, blending subtle oak influence with a purity of fruit.

The wine is made with no fining or filtering, preserving its natural texture and enhancing its aging potential. The careful balance of aging techniques, along with the estate’s strict low-yield viticulture, results in a wine that is both structured and vibrant, with an impressive capacity for aging—up to 20 years.

Tasting Notes

  • Color: A deep, garnet hue with purple reflections.
  • Aroma: The nose opens with vibrant aromas of red and black berries, hints of lavender, garrigue, and a touch of black pepper. Subtle notes of violet and spiced oak emerge with time.
  • Palate: On the palate, this wine shows a seamless integration of ripe black cherry, blackberry, and plum, with layers of licorice, herbs, and a hint of smoky minerality. The tannins are finely grained, offering a plush texture that leads to a long, savory finish marked by spice and earth.

Did You Know?

L’Aventure was founded by Stephan Asseo, a maverick winemaker who left his traditional Bordeaux roots in search of creative freedom. He found it in Paso Robles, where he could blend Rhône and Bordeaux varietals without the constraints of French AOC regulations. The name "L'Aventure" reflects Asseo’s daring journey from France to California, embodying his innovative spirit in winemaking.

Wine Pairing Ideas

  • Duck breast with fig compote: The richness of the duck and the sweetness of the figs will enhance the lush fruit flavors in the wine.
  • Lamb tagine with prunes and almonds: The wine's depth of fruit and spice will complement the earthy, sweet, and savory notes of the dish.
  • Roasted venison with blackberry sauce: The gamey flavors of venison pair beautifully with the wine’s intense blackberry and plum notes.
  • Aged Manchego or Comté: The wine’s tannic structure and fruit-forward profile balance the saltiness and nutty flavors of aged cheeses.

History of L’Aventure

The story of L’Aventure begins with Stephan Asseo, a classically trained French winemaker who, after graduating from the École Œnologique de Bordeaux, spent nearly two decades producing wine in Saint-Émilion and Côtes de Castillon. As the owner of Domaine de Courteillac, Asseo achieved critical success but found himself creatively constrained by the Appellation d’Origine Contrôlée (AOC) system. Frustrated by its strict varietal, yield, and winemaking regulations, he envisioned a place where he could freely express his style.

In 1996, after three years of global vineyard exploration—from South America to South Africa and the Napa Valley—he discovered Paso Robles, then an emerging but underrated wine region. The area’s limestone soils, Mediterranean climate, and vast stylistic potential reminded him of Bordeaux, but with fewer limits. Asseo purchased land on the west side of Paso Robles in 1998, cleared it himself, and began planting vines with high density, following European viticultural principles. From its first vintages, L’Aventure gained recognition for producing wines that combined Old World elegance with New World richness, earning praise from critics such as Robert Parker and multiple 100-point scores. Today, the estate is family-run, with Stephan’s daughter Chloé Asseo playing a growing role in both business and viticulture.

Region and Vineyards

L’Aventure is located in the Adelaida District, on the west side of Paso Robles AVA, where the Santa Lucia Mountains begin to roll inland. This subregion is distinct for its elevated topography (up to 500 meters) and high concentrations of calcareous shale and limestone, rare in California and highly prized for their ability to retain water and reflect heat. These soils limit vine vigor and yield, concentrating flavors and supporting wines of natural acidity and fine tannin structure.

The estate spans about 40 hectares of planted vines, cultivated at 2,100 vines per acre, a notably high density by New World standards. The exposure varies across south-facing slopes, terraced hillsides, and plateaus, creating a mosaic of microclimates that allow Stephan Asseo and his team to tailor variety to parcel. Warm days encourage phenolic ripeness and richness, while cool evenings, influenced by coastal breezes from the Pacific, preserve acidity and aromatic lift. Yields are tightly controlled—1.5 to 2 tons per acre—producing intensely concentrated, expressive fruit that defines the identity of each cuvée.

Wine Range of L’Aventure

L’Aventure’s portfolio is compact but deeply expressive, built exclusively on estate-grown fruit and defined by precision, power, and aging potential. Each wine reflects a meticulous blending process, often combining Rhône and Bordeaux varietals—an uncommon practice globally, and a defining hallmark of the estate.

The Estate Cuvée is the flagship wine, typically composed of Syrah, Cabernet Sauvignon, and Petit Verdot, and represents the fullest expression of the property’s terroir. It is aged in a high percentage of new French oak and bottled unfined and unfiltered.

Another cornerstone of the estate is Optimus, the estate’s more accessible wine but made with the same care—usually Syrah-heavy with Cabernet and Petit Verdot, it showcases approachability without sacrificing depth.

Cuvée Chloé, named after Stephan’s daughter, is a co-fermented blend of Syrah, Grenache, and Viognier, aged partly in amphora, and praised for its aromatic precision and texture.

For Her, a tribute to Stephan’s wife Béatrice, blends Syrah, Graciano, and Viognier, co-fermented and amphora-aged, offering elegance and floral lift.

Lastly, Côte à Côte is a Grenache-dominant cuvée in the tradition of Châteauneuf-du-Pape, blended with Syrah and Mourvèdre, showcasing red fruit, savory spice, and Paso’s Mediterranean soul.

Each wine is designed to reflect its parcel of origin, its vintage character, and a vision of balance between power and finesse. Aging potential is significant across the range, with top wines evolving gracefully over two decades or more.

Robert Parker (RP) : 98 Points (2020)
The 2020 Côte a Côte is a beautiful blend of 45% Grenache, 30% Syrah and 25% Mourvèdre and one of the most successful wines I tasted from the challenging 2020 vintage. Deep ruby-purple, it offers pure aromas of blackcurrant, boysenberry, tar and pipe tobacco, continually unfolding with each return to the glass. The full-bodied palate offers wave after wave of perfumed fruit and tremendous spicy accents. It's powerful yet harmoniously structured with powdery tannins and seamless acidity, and it offers a very long, detailed finish. (EB)

James Suckling (JS) : 97 Points (2020)
I love the depth and the mineral quality of this. Dark cherries, black licorice, iodine, graphite, oyster shells and hot stones. Quite vertical yet broad, with super fine but present tannins. Long, seductive yet quite focused, too. A stunner from L’Aventure. 45% grenache, 30% syrah and 25% mourvedre. Drink or hold.

Vinous (Antonio Galloni) (VN) : 95 Points (2020)
The 2020 Côte a Côte is youthful and coy, displaying a subtle blend of dusty stone, lavender and wild blueberries. It's pure pleasure on the palate, velvety smooth yet full of energy, with crisp red and black fruits that cascade throughout. This finishes spicy, leaving a primary concentration and subtly grippy tannins that frame the experience without slowing its momentum. The 2020 is an understated beauty that will require some cellaring to blossom fully. (EG)

Jeb Dunnuck (JD) : 94 Points (2020)
Blackberries, peppery herbs, graphite, iron, and liquid violet notes all emerge from the 2020 Cote A Cote, a pure, brilliantly textured, full-bodied blend based on 45% Grenache, 30% Syrah, and 25% Mourvèdre. It has a touch of grippy tannins on the finish (which are common in the vintage), but it’s balanced and offers beautiful fruit as well as serious length. It's going to keep for 15 years or more. It's a gorgeous wine.

Decanter (DCT) : 94 Points (2020)
Floral and lifted on the nose, dark chocolate, violets and rose petals with sweet strawberries and pomegranates. This has a sticky side, balsamic touches but with herbal edges too. Thrilling with a lovely texture, you get the grip and pull from the fine but tense tannins, this has a purity an energy to it with excellent acidity. I like the direction and the push from start to finish. You get the California heat and the stewed strawberry fruit but there is also an elegance and energy to this where it doesn't feel overworked and still has freshness and a juicy appeal. Ageing 14 months in French oak (33% new, 36% one year old, 17% concrete and 15% amphora).
