Region and Vineyards

L’Aventure Vineyard is located on the rugged west side of Paso Robles, a dynamic appellation on California’s Central Coast that benefits from both maritime influence and warm inland temperatures. This location provides a vital diurnal shift, with hot days encouraging ripeness and cool nights preserving acidity. The vineyard’s position on limestone-rich soils adds minerality and natural tension to the fruit, offering ideal conditions for Rhône varieties such as Syrah, Grenache, and Viognier.

The estate, owned and farmed by Stephan Asseo, is cultivated with an emphasis on precision viticulture and low yields, averaging just 1.5 to 2 tons per acre. Each block is managed individually, allowing full expression of the site’s complexity. The resulting fruit is concentrated, balanced, and intensely flavored—foundational qualities in the crafting of Cuvée Chloé, a wine that fully reflects the distinct personality of the estate.

Winemaking

The 2019 vintage is a co-fermented blend of 69% Syrah, 23% Grenache, and 8% Viognier, all grown on the estate. Co-fermentation of Viognier with Syrah is a traditional Rhône technique that enhances aromatic lift, color stability, and elegance. The Grenache, from old vines, contributes red fruit vibrancy and a supple, textural core. This precise composition showcases the winemaker's intimate knowledge of each block's potential.

Aging was carried out over 14 months in a combination of 38% new French oak, 26% one-year-old barrels, and 36% amphora, a technique that adds purity and freshness while moderating oak impact. The wine was neither fined nor filtered, preserving its integrity and nuance. Bottled in March 2021, it is crafted for long-term aging, with a projected evolution over more than two decades.

Cuvée Chloé is named after Chloé Asseo, the daughter of Stephan Asseo, founder of L’Aventure Winery. Originally from Bordeaux, Asseo left France in search of creative freedom beyond the constraints of the AOC system. History of L’Aventure

The story of L’Aventure begins with Stephan Asseo, a classically trained French winemaker who, after graduating from the École Œnologique de Bordeaux, spent nearly two decades producing wine in Saint-Émilion and Côtes de Castillon. As the owner of Domaine de Courteillac, Asseo achieved critical success but found himself creatively constrained by the Appellation d’Origine Contrôlée (AOC) system. Frustrated by its strict varietal, yield, and winemaking regulations, he envisioned a place where he could freely express his style.

In 1996, after three years of global vineyard exploration—from South America to South Africa and the Napa Valley—he discovered Paso Robles, then an emerging but underrated wine region. The area’s limestone soils, Mediterranean climate, and vast stylistic potential reminded him of Bordeaux, but with fewer limits. Asseo purchased land on the west side of Paso Robles in 1998, cleared it himself, and began planting vines with high density, following European viticultural principles. From its first vintages, L’Aventure gained recognition for producing wines that combined Old World elegance with New World richness, earning praise from critics such as Robert Parker and multiple 100-point scores. Today, the estate is family-run, with Stephan’s daughter Chloé Asseo playing a growing role in both business and viticulture.

Region and Vineyards

L’Aventure is located in the Adelaida District, on the west side of Paso Robles AVA, where the Santa Lucia Mountains begin to roll inland. This subregion is distinct for its elevated topography (up to 500 meters) and high concentrations of calcareous shale and limestone, rare in California and highly prized for their ability to retain water and reflect heat. These soils limit vine vigor and yield, concentrating flavors and supporting wines of natural acidity and fine tannin structure.

The estate spans about 40 hectares of planted vines, cultivated at 2,100 vines per acre, a notably high density by New World standards. The exposure varies across south-facing slopes, terraced hillsides, and plateaus, creating a mosaic of microclimates that allow Stephan Asseo and his team to tailor variety to parcel. Warm days encourage phenolic ripeness and richness, while cool evenings, influenced by coastal breezes from the Pacific, preserve acidity and aromatic lift. Yields are tightly controlled—1.5 to 2 tons per acre—producing intensely concentrated, expressive fruit that defines the identity of each cuvée.

Wine Range of L’Aventure

L’Aventure’s portfolio is compact but deeply expressive, built exclusively on estate-grown fruit and defined by precision, power, and aging potential. Each wine reflects a meticulous blending process, often combining Rhône and Bordeaux varietals—an uncommon practice globally, and a defining hallmark of the estate.

The Estate Cuvée is the flagship wine, typically composed of Syrah, Cabernet Sauvignon, and Petit Verdot, and represents the fullest expression of the property’s terroir. It is aged in a high percentage of new French oak and bottled unfined and unfiltered.

Another cornerstone of the estate is Optimus, the estate’s more accessible wine but made with the same care—usually Syrah-heavy with Cabernet and Petit Verdot, it showcases approachability without sacrificing depth.

Cuvée Chloé, named after Stephan’s daughter, is a co-fermented blend of Syrah, Grenache, and Viognier, aged partly in amphora, and praised for its aromatic precision and texture.

For Her, a tribute to Stephan’s wife Béatrice, blends Syrah, Graciano, and Viognier, co-fermented and amphora-aged, offering elegance and floral lift.

Lastly, Côte à Côte is a Grenache-dominant cuvée in the tradition of Châteauneuf-du-Pape, blended with Syrah and Mourvèdre, showcasing red fruit, savory spice, and Paso’s Mediterranean soul.

A straight beast of a wine, the 2019 Chloe offers blockbuster levels of black and blue fruits as well as notes of graphite, ground pepper, and crushed rock. Based on a co-fermented blend of 69% Syrah, 23% Grenache, and 8% Viognier that saw a slightly shorter maceration than normal, this inky hued, full-bodied, massive 2019 still somehow stays flawlessly balanced and elegant on the palate. Inky ruby. Intense cherry, dark berry, allspice, vanilla, smoked meat and candied flowers on the highly perfumed nose. Broad, concentrated cherry liqueur, dark berry and violet pastille flavors turn livelier as the wine opens up. Blends richness and energy with a sure hand and finishes impressively long and spicy, with resonating cherry and floral notes and harmonious tannins that add subtle closing grip. 50% whole clusters. This is very fine-tannined with blackberries, stone, black chocolate and walnuts. Full-bodied, yet creamy, with medium, velvety tannins and a dark-fruited finish. Lovely texture. 69% syrah, 23% grenache and 8% viognier. Drinkable now, but better in a year or three. (4/2022)

A blend of co-fermented Syrah (69%), Grenache (23%) and Viognier (8%), the 2019 Cuvée Chloe has a deep ruby color and is especially fragrant this vintage, bursting with scents of red cherries, blueberries and blood orange with accents of violet, garrigue, tar and forest floor. The medium-bodied palate is fresh and silky with pure, layered fruits and a long finish. It deserves another 3-5 years in bottle and should be long lived in the cellar. (EB) 95+ (3/2022)
