Region and Vineyards

The Soldaat vineyard is located in the Piekenierskloof area of the Citrusdal Mountain, an elevated and remote site that experiences cooler temperatures due to its altitude. This climate ensures a slower ripening process, allowing the grapes to develop concentrated flavors while retaining vibrant acidity.

The vineyard’s soils consist of decomposed Table Mountain sandstone, which provides excellent drainage and a unique mineral profile that enhances the wine’s complexity. With a yield of only 22 hl/ha, the old bush vines focus their energy into producing high-quality fruit that reflects the rugged environment and the purity of the terroir.

Winemaking

The vinification process of Soldaat 2022 is tailored to preserve the Grenache grape’s natural transparency and fruit purity. The fermentation begins with 60% whole-cluster grapes in concrete tanks, while the remaining 40% are destemmed, providing enough juice to initiate fermentation naturally. The fermentation lasts for 30 days, with gentle skin contact to ensure an elegant extraction of tannins and flavors.

After pressing the grapes in an old basket press, the wine is aged entirely in 33-hectoliter concrete tanks for 12 months. This includes 8 months on the lees, followed by racking into another tank for an additional 4 months of natural settling. The concrete aging method preserves the wine’s bright fruit character and minerality without imparting any oak influence. A minimal addition of 60 mg/L sulfur is made before bottling to maintain freshness and stability.
