Launched with the 1990 vintage in 1993, Bin 407 was developed in response to the increasing availability of high quality Cabernet Sauvignon fruit. Inspired by Bin 707, Bin 407 offers varietal definition and approachability, yet with structure and depth of flavour. Textbook Cabernet Sauvignon, the varietally expressive Bin 407 highlights the rewards of Penfolds multi-region, multi-vineyard blending, with a core of ripe fruit supported by sensitive use of French and American oak.

Colour : Dense dark red.

Nose : Instantly Penfolds – emboldened by its formic disposition and complexity. Mint/dry herb (rosemary/sage) varietal reminiscences. Wafts of Chorizo (red) sausage; tomato and red capsicum pizza base/bruschetta. Integrated, perfumed oak (polished teak, brown boot-polish).

Palate : Varietally IDd and expressive – green olive and a market-garden foray – broccoli/spinach/broad beans/broad-leaf legumes. Fresh acidity coupled with ‘non-shy’ tannins induce structural linearity/definition/liveliness. A firm finish. A persistent ‘afterglow’. Oak well hidden, awoken with a swirl.

Robert Parker (RP) : 94 Points (2021)
The 2021 Bin 407 Cabernet Sauvignon is from Coonawarra, Wrattonbully, McLaren Vale, Padthaway, Barossa Valley and Adelaide Hills. As I smelled this, I thought, "Gee, this smells good!" Usually, I find the presence of American oak to be distracting and ill-matched to the leafy, detailed Cabernet fruit. Here, there has been a significant proportion of French oak (25% new) and a lesser proportion of American oak (12% new oak). You get dark chocolate, berry compote, resin, stewed rhubarb, cassis, crème de menthe, soft-eating licorice and black olive tapenade. All regions have a warm climate, with the exception of Adelaide Hills, of course. In this cooler year, the fruit is mouth-filling without being heavy. Saturating. Lovely. Creamy. Big! Excellent.

Decanter (DCT) : 96 Points (2020)
The beautiful nose is typically seductive: rich, full and confident, without ever being too heavy or blocky – the mark of Penfolds’ fastidious Cabernet Sauvignon selection from five separate regions. The palate glides along a silky, gossamer weave of vivid red and purple berries, and this glorious choir of luscious and supple fruits is supported by just a hint of wild herbs, a sprinkle of chocolate powder and tannins that support the impressive palate length. Released at A$120/bottle.

James Suckling (JS) : 94 Points (2020)
Strong statement of cabernet is the first impression, with violets, blueberries, blackcurrants, fresh leaves and herbs. I like the clarity here. The palate has such intense and rich fruit, with plush, polished and ripe blueberry and cassis flavors. Holds an impressively measured and balanced stance. A blend of McLaren Vale, Barossa Valley, Coonawarra, Padthaway and Wrattonbully. Drink or hold.

Wine Spectator (WS) : 92 Points (2020)
Fleshy and toothsome, this has an appealing density to the tannins, with notes of roasted meat and herbs, tobacco and cedar as well as plenty of concentration, which bodes well for time in the cellar. Drink now through 2037.

Wine Enthusiast (WE) : 91 Points (2020)
A sheen of cola oak is at the fore, with broody black cherry, tobacco leaf, coffee and dried herb notes just below. Massive, oak-driven tannins are raspy and drying, and while the acidity bites a bit, it does provide much-needed freshness and balance to this variety's—and winery's—inherent power and richness. Old-school Cab that requires a good decant or lengthy cellaring.

Wines & Spirits (W&S) : 90 Points (2020)
A bright, primary, lightning bolt of flavor, this feels saturated up front, then the electricity dissipates, leaving some bitterness in the end. This needs time to integrate and lengthen.

Vinous (Antonio Galloni) (VN) : 93 Points (2019)
Dark magenta. Ripe cherry, cassis, cracked pepper and incense aromas are complemented by suggestions of menthol, pipe tobacco and woodsmoke. The 2019 Cabernet Sauvignon Bin 407 shows firm tension and power in the mouth, offering sappy red and dark berry, vanilla, rose pastille and spicecake qualities and a sweetening cola nuance that emerges with aeration. Juicy and energetic on the long, gently chewy finish, which features well-knit tannins and lingering spice and bitter cherry notes. Raised in a combination of French and American oak hogsheads, 35% of them new. Best after 2026.

James Halliday (JH) : 96 Points (2017)
Great colour; blackcurrant, licorice, dark chocolate and spices run through the bouquet and palate alike, splitting and reforming in a dance of cassis and spices of all kinds. There is life and energy to spare here. Another major success. (9/2019)

Jeb Dunnuck (JD) : 92 Points (2017)
Another beautiful effort in the lineup this year is the 2017 Cabernet Sauvignon Bin 407, which is a multi-region cuvée brought up in both French and American oak hogsheads. Classic notes of blackcurrants and cassis interwoven with hints of dill, tobacco, and graphite all flow to a full-bodied Cabernet Sauvignon that’s fabulously balanced, with good acidity as well as ripe tannins. Give bottles another year or two and it should cruise for a decade or more. (11/2019)
