Region and Vineyards

The 2021 vintage of Bin 407 is a masterful blend sourced from premier vineyards across South Australia, including Coonawarra, Wrattonbully, McLaren Vale, Padthaway, Barossa Valley, and Adelaide Hills. These regions span varied mesoclimates and soil types, contributing complementary nuances of fruit, structure, and aromatic character.

Vintage conditions were notably favourable across all sites. Spring was warm and dry, promoting excellent fruit set, especially in Coonawarra and Padthaway. The growing season was defined by relatively mild temperatures and low disease pressure, with a slow, even ripening period. Yields were generous and of outstanding quality, particularly for Cabernet Sauvignon. The result: small, thick-skinned berries with a balance of fruit concentration and fresh acidity, ideal for Bin 407's expressive style.

Winemaking

Bin 407 2021 is composed exclusively of Cabernet Sauvignon, vinified using Penfolds' time-tested approach. Fruit was destemmed and fermented in stainless steel, with regular pump-overs to extract fine tannins and colour.

The wine underwent 12 months of maturation in French oak hogsheads (25% new) and American oak hogsheads (12% new), with the balance in one-year-old barrels. This careful oak regime was designed to frame the wine without overshadowing its varietal purity. The result is a Cabernet that balances accessibility and ageability-Penfolds' stylistic bridge between Bin 707 and more approachable red releases.

History of Penfolds

Penfolds was established by Dr Christopher and Mary Penfold, English immigrants who planted vines at Magill Estate near Adelaide with the original intention of producing medicinal fortified wines. The 20th century marked a turning point in Penfolds' identity. In 1948, Max Schubert was appointed Chief Winemaker. Inspired by his visit to Bordeaux, he created Grange Hermitage (now simply Grange)—a revolutionary wine that initially defied tradition by aging Shiraz in new American oak. Although met with resistance in the early years, Grange would later earn Penfolds international acclaim and define the stylistic foundation of its red winemaking philosophy.

Penfolds continued to innovate throughout the 20th and 21st centuries, introducing benchmark wines like Bin 707 Cabernet Sauvignon, Bin 389 Cabernet Shiraz, and the white flagship Yattarna Chardonnay. The company also pioneered multi-regional and multi-varietal blending, creating house styles that transcended vintage and terroir. In recent years, Penfolds expanded beyond Australian borders, launching California and French collections, including Bin 149 and FWT 585—international projects that still bear the hallmark Penfolds craftsmanship.

Today, Penfolds remains a global reference for both innovation and heritage, with Peter Gago as Chief Winemaker since 2002. Under his leadership, the estate has maintained its legacy while pushing stylistic boundaries worldwide.

  • McLaren Vale - known for plush, velvety Shiraz and Cabernet with a Mediterranean softness and savoury lift.
  • Coonawarra - revered for Cabernet Sauvignon grown on terra rossa soils, bringing linearity, graphite minerality, and firm tannins (notably in Bin 707 and Bin 169).
  • Padthaway and Wrattonbully - cooler regions producing Chardonnay and structured red fruit with acidity and finesse.
  • Adelaide Hills and Tumbarumba - high-altitude, cool-climate zones crucial for white wine excellence, particularly Yattarna Chardonnay, which is often blended from Tasmania, Tumbarumba and the Hills.

The 2021 Bin 407 Cabernet Sauvignon is from Coonawarra, Wrattonbully, McLaren Vale, Padthaway, Barossa Valley and Adelaide Hills. As I smelled this, I thought, "Gee, this smells good!" Usually, I find the presence of American oak to be distracting and ill-matched to the leafy, detailed Cabernet fruit. Here, there has been a significant proportion of French oak (25% new) and a lesser proportion of American oak (12% new oak). You get dark chocolate, berry compote, resin, stewed rhubarb, cassis, crème de menthe, soft-eating licorice and black olive tapenade. All regions have a warm climate, with the exception of Adelaide Hills, of course. In this cooler year, the fruit is mouth-filling without being heavy. Saturating. Lovely. Creamy. Big! Excellent.

The beautiful nose is typically seductive: rich, full and confident, without ever being too heavy or blocky – the mark of Penfolds’ fastidious Cabernet Sauvignon selection from five separate regions. The palate glides along a silky, gossamer weave of vivid red and purple berries, and this glorious choir of luscious and supple fruits is supported by just a hint of wild herbs, a sprinkle of chocolate powder and tannins that support the impressive palate length. Strong statement of cabernet is the first impression, with violets, blueberries, blackcurrants, fresh leaves and herbs. I like the clarity here. The palate has such intense and rich fruit, with plush, polished and ripe blueberry and cassis flavors. Holds an impressively measured and balanced stance. A blend of McLaren Vale, Barossa Valley, Coonawarra, Padthaway and Wrattonbully. Drink or hold.
