Region and Vineyards

Idée Fixe Premier Brut is sourced exclusively from Karridale, in the southernmost pocket of Margaret River, Western Australia. This subregion is marked by quartz-rich soils, persistent cloud cover, and cold oceanic winds from the Southern Ocean, providing a climate ideal for Chardonnay destined for sparkling wine.

The grapes come from house-grown vines specifically cultivated for méthode traditionnelle production. Decades of Chardonnay mastery at Vasse Felix, the founding winery of Margaret River, inform every decision - vineyard selection, clonal choice, and farming precision. The 2021 vintage experienced a cool, humid start followed by moderate ripening, yielding fruit with bright natural acidity, perfect for base wine.

Winemaking

This 100% Chardonnay Blanc de Blancs is crafted using the méthode traditionnelle, with a focus on precision and delicacy. Only the premium free-run cuvée is used, ensuring purity and finesse. The wine is aged 21 months on lees, developing complexity while retaining its vibrant core.

A dosage of 4.75 g/L balances the natural tension, and the alcohol level sits at 12.5%, contributing to elegance and restraint. Released in July 2023, the wine is intended to be enjoyed young, yet it will continue to evolve over the next 2–3 years in bottle.

Tasting Notes

  • Color: Brilliant pale yellow with a fine and persistent bead.
  • Aroma: Coastal and mineral, opening with nuances of struck match, wet stone, oyster shell, and sea spray. Notes of yellow plum, Granny Smith apple pie, almond blossom, and ocean mist interplay with subtle spice and freshly baked sourdough.
  • Palate: Lively mousse leads into a palate defined by citrus-driven acidity, mineral grip, and textural complexity. Hints of allspice biscuit and saline freshness unfold into a long, spacious finish, refined yet deeply characterful.

Idée Fixe is a dedicated sparkling wine project from the iconic Vasse Felix estate, marking a new chapter in Margaret River’s sparkling wine journey. The name—French for “obsession”—reflects the team's enduring dedication to Chardonnay, reimagined in a méthode traditionnelle form.

Wine Pairing Ideas

  • Oysters with lemon and sea salt – Mirrors the wine’s briny, coastal edge.
  • Scallop crudo with yuzu dressing – Complements the citrus lift and creamy mousse.
  • Roast chicken with almond and herb crust – Echoes the nutty and savoury undertones.
  • Soft goat cheese on sourdough toast – Enhances texture and minerality.

Robert Parker (RP) : 95 Points (2019)
It's very important to note that the wine I tasted here, at the Idée Fixe cellar in May, was hand-disgorged in front of me and, as such, is an unfinished wine. In many ways, I wish the wines could all be like this: hand-disgorged on request... there is nothing fresher or more delicious. So, the 2019 Late Disgorged Premier Brut is a product of hand-riddling and hand-disgorgment. It is the 2019 Premier Brut that has rested on its lees since secondary fermentation commenced in bottle, some time in the middle of 2019. It speaks so fragrantly of coastal sea spray, rockery, saline, tension and minerality, lemon zest, white rocks, river stones, persistent, cool, fresh, fine. I love this. It is sensational, classic, mineral blanc de blancs. The future of this house rests on wines like this. If only we could all have them like this, all the time. Wine to be released sometime in the future.
