Winemaking

The Dalrymple Pinot Noir was crafted from small batches of hand-picked grapes, reflecting the diverse terroirs of Pipers River and Coal River Valley. A cooler growing season in 2023, influenced by La Niña, led to extended ripening, enhancing flavor concentration while preserving the wine’s natural freshness.

The grapes underwent cold maceration to enhance color and fruit purity before being fermented in open-top fermenters. A mix of wild and cultured yeasts was used to bring out the full range of aromatic and textural complexity. The wine was then aged in French oak barrels (with a portion of new oak) for 9-12 months, adding layers of spice and complexity while ensuring the final wine maintained balance and elegance.

The estate’s vineyards are characterized by deep loam soils with underlying basalt rock, providing excellent drainage and encouraging the vines to root deeply. In addition to its Pipers River vineyard, Dalrymple sources fruit from other carefully selected vineyards across Tasmania, including Coal River Valley, which adds richness and depth to their wines.

Seductively lush, with plump mulberry aromas and hints of earth and smoke. The fruit character is ripe but not overly so, and the texture is dense but not heavy due to the fresh acidity and mid-palate density. The grapes are blended from three sites and fermented with 25% whole clusters, three punch-downs daily before being pressed and racked into cask (21% new) for ageing. A crowd-pleasing Pinot that balances richness with structure and freshness.
