Region and Vineyards

The Castello della Sala estate is located in the Umbria region, near Orvieto, and is renowned for its historical significance and premium vineyards. The growing season in Orvieto started with warmer temperatures and dry conditions during both winter and spring. June experienced no precipitation and several heat spikes, yet the vines did not suffer from drought stress due to the favorable pedoclimatic conditions of the estate’s vineyards.

Winemaking

The vinification process at Castello della Sala is designed to take full advantage of gravity flow, which allows for gentle handling of the harvested berries and fermentation processes without mechanical pumps. The grapes are harvested in the early morning to preserve the purity of the fruit and protect it from high daytime temperatures. The must undergoes maceration on the skins at a temperature of 10°C (50°F) for about four hours, followed by decantation and clarification in tanks.

Alcoholic fermentation takes place in barriques, followed by partial malolactic fermentation. In February, the Chardonnay is transferred back into stainless steel vats and blended with Grechetto, which was fermented separately and did not age in oak. The final blend is aged in the bottle for several months in the historic cellars of Castello della Sala before being released for sale.

Did you know?

The name Cervaro comes from the noble Monaldeschi della Cervara family that owned Castello della Sala during the 14th century. Cervaro della Sala is one of the first Italian wines to undergo malolactic fermentation and aging in barriques. The first vintage of Cervaro was produced in 1985, making it a pioneering wine in Italian winemaking.

Tasting Notes

Cervaro della Sala is a light straw yellow in color with greenish hues. The nose presents slight smoky notes of cedar and flint followed by floral hints of Spanish broom and mimosa blossoms. The palate is vibrant and fresh, characterized by notes of vanilla, lemon butter, and small pastries. Cervaro della Sala has outstanding aging potential but can be enjoyed immediately.

History of Antinori

In 1385, the Antinori family became part of the wine business when Giovanni di Piero Antinori joined the Florentine Vintner's Guild.

Since 1966, Marchese Piero Antinori, son of Marchese Niccolò, has run the company with his daughters, Albiera, Allegra and Alessia, also playing an active role.

For more than 26 generations now, Antinori's philosophy has been based on the combination of both tradition and innovation: to preserve Italy's enological traditions and to experiment innovation in winemaking, giving each wine tester the pleasure of discovering a unique alliance.

Vineyards

Each of Antinori's vineyards and estates has its own individual character, its own history and its own universe perceived and discovered in the tasting of each of their fine wines.

Badia a Passignano

Antinori's vineyards for red wine are mostly located in Tuscany, in the area of Chianti Classico where it owns three estates, total 575 acres: Tignanello, Pèppoli and Badia a Passignano.

White wine is produced in Umbria in the Orvieto Classico region, at Castello della Sala estate, and in Tuscany at Monteloro estate.

Red wine comes from the Montepulciano, Bolgheri, Montalcino, Castiglione della Pescaia and Sovana areas.

Besides Tuscany and Umbria, Antinori is also present in Lombardy, Piedmont, Apulia, California, Washington State, Hungary and Malta where it produces both red and white wines.

The Tignanello and Solaia Estate - The uniqueness of a land and the history of a great wine

The Tignanello estate is a total of 319 hectares in size of which 127 hectares are planted with vines. In particular, two vineyards are real treasures:

  • Solaia: 20 hectares
  • Tignanello: 57 hectares

The area is very particular due to the high altitude being over 400 metres above sea level, the vineyards having a southwest exposure to the sun, the microclimate and the soil, which is marine loam based with a rich addition of alberese and galestro rock dating back to the Eocene and Miocene eras.

Viticulture

The growing season here is characterized by hot days and cool nights.

In the early 1970ies, the Tignanello estate was, to some extent, the viticultural research ground for Antinori. Investigations into vine growing concentrated on the improvement of the grapes to obtain a higher concentration and softer tannins. This was achieved through planting density, foliage control and selection of the Cabernet and Sangiovese.

In the oenological field, the goals were to achieve wines with a well-defined character.

This was accomplished by a rigorous selection of the grapes during harvest and when received at the winery, gentle crushing of the grapes with as little stress as possible, and by allowing malolactic fermentation to occur in barrel.

When the first production of Solaia began, more than thirty years ago, the grapes came from a plot of land that was within the larger Tignanello vineyard. The same particular characteristics as the original vineyard, such as the altitude, the soil type and the good exposure to the sun (hence the name Solaia), are also found in a nearby vineyard. This vineyard has been integrated into the original vineyard since 1997.

Currently, the Solaia vineyard is 20 hectares and planted with Cabernet Sauvignon (15 hectares), Cabernet Franc (1 hectare) and Sangiovese (4 hectares) with an average age of 15 years.

The density per hectare varies from a minimum of 5,500 to a maximum of 7,200 and the low-spurred cordon training system is used. Over the years, there has been a progressive renewal of the Solaia vineyard. This has been accomplished by utilizing the many years of knowledge and ever-increasing experience of the estate's land to highlight the personality of Solaia.

Robert Parker (RP) : 94 Points (2022)
This is Marchesi Antinori's top white wine, and it comes from the region of Umbria. The Castello della Sala 2022 Cervaro della Sala is based on Chardonnay and has a small part of the local grape Grechetto in the blend. The nose opens to a reductive note of flint or matchstick, but it lifts quickly to reveal soft orchard fruit, white peach and minty apple. There are delicately applied toasted notes with a hint of pecan or macadamia nut. To finish, you also get salty mineral notes that underline the extremely vertical or lifted personality of the bouquet. Renzo Cotarella tells me that tweaks to winemaking in recent years have attempted "to slim down the wine and not make it any bigger." This was a hot vintage, but Cervaro della Sala remains true to its leaner and meaner blueprint. However, given its accessible personality, we could expect a shorter drinking window for the 2022s.

This is very aromatic and lifted with mineral, nougat, floral, and lightly cooked apples. Some flint and matchstick. Medium- to full-bodied with a fine phenolic and acid backbone that energizes the wine. Complex aftertaste with subtle fruit and pastry at the end. This will age beautifully but hard not to drink now.

Warmed, spiced apple slices with fresh cream, vanilla and honey aromas waft from the glass of this heady Umbrian Chardonnay. Rich, with bold flavors showcasing roasted orchard fruits and sweet spices from the time in oak flow alongside notes of crème fraiche and whipped butter finishing with an acidity that keeps the wine right where it needs to be. Vinous (Antonio Galloni) (VN) : 92 Points (2019)
A mix of mulled yellow apples, crushed hazelnuts, dusty dried flowers and wet stone creates a rich and inviting display as the 2019 Cervaro della Sala evolves in the glass. It’s soft and enveloping, casting opulent waves of textural ripe orchard fruits and subtle savory spices across the palate. Nuances of wild herbs come together with lingering mineral tones under an air of vanilla custard as the Cervaro della Sala tapers off fresh yet with incredible length. This blend, primarily Chardonnay with a dollop of Grechetto, could use another year or two to fully unwind. (EG) (8/2021)

The moderate 2018 growing season yielded a Cervaro of outstanding vivacity and balance. Barrel-fermented chardonnay comprises the majority of the blend, contributing a sleek texture as well as notes of toasted hazelnut and vanilla bean that enrich the crisp apple and pear flavors. A small percentage of stainless-steel-aged grechetto adds fresh acidity to balance the wine’s subtle spice and gingery warmth. Delicious now for its combination of richness and verve, this wine will be even better in a couple of years, as the flavors continue to integrate.

An elegant white, creamy and well-knit, with a spine of citrusy acidity brightening flavors of poached apricot and lemon curd, plus accents of toasted hazelnut and salty mineral. 2015 was a textbook vintage and this is a great Cervaro. Citrus, cream and white flowers on the nose lead seamlessly onto the palate, where you'll find pear and melon with a touch of under-ripe pineapple and cool stone fruits. It has good acidity, minerality and savoury complexity, with excellent balance and a long, sleek, saline finish.
