Region and Vineyards
The Parker Coonawarra Terra Rossa Cabernet Sauvignon is sourced from eight individual blocks within the Parker Estate ‘Abbey’ vineyard in Southern Coonawarra. The Coonawarra region, located in South Australia, is renowned for its unique Terra Rossa soils—a vivid red soil rich in iron oxide over limestone, which provides excellent drainage and contributes to the distinctive character of the wines produced here.
The microclimate of Southern Coonawarra features warm days and cool nights, which extend the ripening period of the grapes. This prolonged maturation enhances the fruit density and tightens the tannin structure, resulting in wines with exceptional balance and longevity. The combination of these geological and climatic factors makes Coonawarra one of the premier regions for growing Cabernet Sauvignon.
Winemaking
The grapes for the Terra Rossa Cabernet Sauvignon were fermented in closed-top fermenters for 13 days. Approximately 10% of the parcels underwent an extended maceration of 30 days to further develop flavor complexity and cellaring potential. After fermentation, all parcels completed malolactic fermentation in stainless steel tanks before being transferred to French oak barriques (40% new) from Saury and Taransaud cooperages for an average of 12 months maturation.
This meticulous winemaking process ensures that the wine captures the full expression of the terroir while developing a refined and elegant structure. The use of high-quality oak barrels adds layers of complexity and subtle oak nuances without overpowering the fruit.

- Color: Dark scarlet with purple hues.
- Aroma: Aromas of dried herbs and sage with bramble and blackcurrant, complemented by red fruit notes of pomegranate and cranberry, and hints of nutmeg and clove.
- Palate: Intense and vibrant on the front palate, showcasing black fruits, sarsaparilla, and clove. The mid-palate is full and balanced with fine, silky tannins and flavors of mocha and umami.
