Region and Vineyards

Enalia is crafted under the Protected Designation of Origin Santorini, one of Greece’s most iconic wine regions. The island’s terroir is shaped by its volcanic history, with ashy soils composed of pumice, lava, and sand that force vines to dig deep for sustenance. The resulting wines are known for their intense minerality and saline finesse.

This cuvée sources grapes from vines over 120 years old, grown in the historical villages of Pyrgos and Megalochori. These ungrafted bush vines are trained in the traditional “kouloura” basket shape to protect the grapes from fierce Aegean winds and preserve water in the island’s arid climate. Low yields and the extreme conditions lend this wine its remarkable concentration and aromatic depth.

Winemaking

Gavalas Enalia is made from 100% Assyrtiko, a noble Greek variety celebrated for its acidity, structure, and volcanic expression. The harvest took place on 30 August, and bottling followed on 25 January, after a considered élevage.

The grapes undergo whole bunch pressing, a technique that enhances phenolic finesse and delicacy. The wine is matured for 16 months on fine lees, split between stainless steel vats and clay eggs, which provide both purity and micro-oxygenation. This dual maturation approach emphasizes texture and complexity while preserving the vibrant freshness Assyrtiko is known for.

  • Color: Pale lemon with green reflections, hinting at youth and vitality.
  • Aroma: Subtle yet expressive notes of white peach, apricot, and citrus zest, layered with crushed stones, flint, and sea spray.
  • Palate: Full-bodied with piercing acidity, a linear mineral drive, and chalky texture. Stone fruit returns on the mid-palate, joined by nuances of white pepper and a gentle phenolic grip from soft tannins.

The Gavalas family, one of the island’s oldest winemaking dynasties, has been cultivating vines in Santorini since the 19th century.

History of Gavalas Winery

Located in the historic village of Megalochori, Gavalas Winery is a fourth- and fifth-generation family estate, now led by George Gavalas and his son Vagelis. The winery is housed in a restored stone canava—a traditional Santorini wine cellar—preserving original architectural elements like grape-stomping rooms and vaulted cellars from ancient Thira.

The Gavalas family has been cultivating vines and making wine for well over a century. Today, they combine this deep-rooted heritage with modern precision, producing wines that reflect both history and terroir. Their aim is clear: to highlight the uniqueness of Santorini’s volcanic soils and showcase the island’s indigenous grape varieties.

While Assyrtiko remains the flagship grape of the estate, Gavalas also vinifies other local varieties including Aidani, Mandilaria, and Mavrotragano. Notably, Gavalas is the only winery on the island that produces wines from the rare native grapes Katsano and Voudomato, preserving viticultural biodiversity and offering unique interpretations of Santorini’s oenological past.

Region and Vineyards

Santorini’s vineyard is unlike any other. The island features prephylloxera vines over 120 years old, planted in volcanic soils formed from lava and ash. Because the phylloxera louse cannot survive in this terrain, these ancient vines are ungrafted and original, making them among the oldest continuously cultivated vines in the world.

The climate is dry and windy, with low annual yields averaging just 3,000 kg/ha. To shield the grapes from harsh winds and scorching sun, vines are trained in the traditional kouloura basket shape. Night-time humidity is absorbed by the porous volcanic soil and returned to the vines during the day, sustaining them without irrigation.

Assyrtiko dominates the vineyard landscape, accounting for approximately 75% of Santorini’s plantings, but the estate also works with other traditional Cycladic grapes to craft both dry and sweet wines.

This wine is made with 100% Assyrtiko from very old ungrafted vines in Pyrgos and Megalochori. Some of these extraordinary plants are 120 years old or more. The Gavalas 2022 Santorini Enalia sees whole-bunch pressing and a long 16 months on the lees. Most of the wine (80%) goes into stainless steel, but 20% matures in egg-shaped clay vessels. It spends another year in bottle. The first vintage produced was 2018, but the 2020 vintage was not made because the winery team deemed it "too tropical"; and the wine will not be made in 2023 because yields were too low. When tasting this beautiful wine, you first notice its creamy texture and its balanced acidity (a hallmark of this estate). The bouquet exhibits gooseberry, pear and quince. It offers pretty salinity too with wet stone and sea mist. This is my favorite wine in this tasting from Gavalas.
