The 2018 Chablis Fourchaume 1er Cru is superb. Rich and ample with tremendous structure, the 2018 possesses terrific depth and textural resonance throughout the finish. Orchard fruit, lemon confit, almond and menthol infuse the 2018 with notable complexity and intensity. Textured, oily and deep with a bit of a savory edge, the 2018 has so much to offer. Apples, melon, flint and stone on the nose with medium to full body and allspice and bitter lemon at the finish. Drink now.

In much the same fashion as the Les Lys the nose is overtly floral in character with background nuances of oyster shell, iodine and wet stone. The impressively rich, concentrated and powerful medium weight plus flavors possess excellent intensity that carries over to the complex, long, dry and focused finale. This is, in a word, terrific. This white hints at peach and greengage, along with lemon, pastry and stone flavors. It's complex and balanced, with a finish that stretches out echoing the mineral element. Best from 2021 through 2028.

Green and yellow apples with herbal notes; lovely and fresh with an oyster shell minerality and a zesty lemon acidity.

The 2015 Chablis 1Er Cru Fourchaume comes from eight parcels on marn soils within the lieu-dit of Vaulorent. It has a delightful bouquet with scents of fresh pear, a hint of marzipan; it is sweet and charming while retaining Chablis-like austerity and poise. The palate is well balanced with crisp acidity, well poised with a touch of salinity developing towards the harmonious finish. This is another excellent wine from William Fevre.

Wines & Spirits (W&S) : 91 Points (2013)

More than half of this lot ferments in stainless steel, the rest in older oak barrels, all of it coming together for ten months in stainless where this wine began to meld into a clean, linear white with tart apple acidity. The structure shows the wine’s finesse, though the flavors are hard to reach for now, tightly drawn around the scent of lees, wheat sheaf and the mineral feel of spring water. This should open after several years of age.

Terrain très incliné avec une pente supérieure à 30 %, ce terroir de Bougros bénéficie d’une exposition plein sud au pied du coteau. Le sol peu épais, mélange argile et cailloux qui restreignent fortement la vigueur de la vigne pour donner des vins complexes et vigoureux.

Le plus grand et le plus célèbre des Grands Crus, il est le berceau historique du vignoble de Chablis. Le terroir, orienté plein sud, avec un sol composé d’argiles très blanches, denses et profondes, repose sur une compression calcaire située à 80 cm qui apporte des notes épicées typiques.

Les Preuses Chablis Grand Cru 2018

Le nom de ce climat tire vraisemblablement son origine de la déformation du mot «perreuse» (pierre), nom donné à l’ancienne voie romaine dont le tracé passait au pied du terroir actuel. Structuré pour la garde grâce à un sol argileux dense et compact reposant sur une dalle calcaire, les vins sont longs et racés.
