Le nom de ce climat tire vraisemblablement son origine de la déformation du mot «perreuse» (pierre), nom donné à l’ancienne voie romaine dont le tracé passait au pied du terroir actuel. Structuré pour la garde grâce à un sol argileux dense et compact reposant sur une dalle calcaire, les vins sont longs et racés.

This comes from two parcels, facing east and south-west, respectively, making a very tidy 2.5ha in total. Showing the delicate touch of one of the very best winemakers in Chablis, this is a saline, focused, wonderfully structured Preuses that has plenty of grip and acidity, sappy, bone-dry flavors and remarkable length. The grands crus of Les Clos and Bougros, Côte de Bouguerots scored 96 and Valmur 95.

Burghound (BH) : 95 Points (2018)

This is one of the most elegant wines in the range with its cool and admirably airy and pure aromas of citrus zest, oyster shell, seashore and once again gentle wood nuances. The mouth feel of the medium-bodied flavors combines volume with refinement while delivering excellent length on the balanced, stony and markedly dry finale. This is not quite as concentrated as the best here but as it usually is, it's a marvelous wine of refinement and punch. Barrel Sample: 93-95

Lots of bitter-lemon character with dried apples, steel and some dried white pineapple. Full-bodied with bright acidity and a fruity finish. Drink or hold.

The 2018 Chablis Grand Cru Les Preuses is another beautiful wine from Fèvre, wafting from the glass with pretty aromas of orange blossom, oyster shells, citrus zest and fresh pear. Medium to full-bodied, satiny and incisive, it's ample but precise, with racy acids and an intensely saline, mineral finish.

Ripe notes of peach and green plum are offset by wild herb and bitter citrus peel accents in this tensile white. It finishes on the compact side, with fine length.

The 2017 Chablis Les Preuses Grand Cru has a well defined bouquet with hints of white flower, nettle and dandelion augmenting the green apple and spicy aromas. The palate is powerful on the entry, very intense and focused with a precise and detailed finish that is one of the best that the domaine produced on the finish. Excellent. Barrel Sample: 93-95

Two parcels of Les Preuses go into this bottling - one facing east and one south-west - making 2.5 hectares in all. The result is compellingly harmonious, showing the sap and vivacity that are typical of the Grand Cru. Refreshing and saline, it’s a pleasure to drink young but will age extremely well with a salty tang that lingers on the palate. 2019-28

Bougros Cote Bouguerots Chablis Grand Cru 2016

Terrain très incliné avec une pente supérieure à 30 %, ce terroir de Bougros bénéficie d’une exposition plein sud au pied du coteau. Le sol peu épais, mélange argile et cailloux qui restreignent fortement la vigueur de la vigne pour donner des vins complexes et vigoureux.

Le plus grand et le plus célèbre des Grands Crus, il est le berceau historique du vignoble de Chablis. Le terroir, orienté plein sud, avec un sol composé d’argiles très blanches, denses et profondes, repose sur une compression calcaire située à 80 cm qui apporte des notes épicées typiques.
